Air-fryer 400F or 200C degrees cook for 15 minutes
Ennai kathirikai kulambu is a gravy based dish from the Tamil Nadu cuisine. Ennai kathirikai kulambu has a sour taste with a complex flavor. So best served with  rice.


1 tsp    gingelly oil 

1 tsp fenugreek seeds

2 tsp chana dal 

2 Tbsp  coriander seeds

2  tsp Peanut 

2 tsp Sesame Seeds

1/4  cup grated coconut

1/2 tsp black pepper  

8 dry red chilies 


1/4 cup water or add as required


For Tamarind Pulp

  • 1 tablespoon tightly packed tamarind (imli)
  • ½ cup hot water

Other Ingredients For Ennai Kathirikai Kulambu

  • 10 to 12 small brinjals (kathirikai or baingan or eggplant)
  • 3 tablespoons sesame oil 
  • ½ tsp  Mustard seeds  
  • Garlic 
  • Onion 1/4 cup 
  • curry leaves 
  • 4 tomatoes ЁЯНЕ 
  • ¼ teaspoon turmeric powder (haldi)
  • 1 tsp coriander Powder 
  • 1 tsp Kashmiri red chili powder 

  • masala paste
    tamarind water

    salt as required
    cooked Brinjal
    1 teaspoon jaggery powder or add as per taste  - optional
